Ingredients
- 3 boiled potatoes
- 1 cup wheat flour
- Salt to taste
- Red chilli powder
- Chaat masala
- Garam masala
- Fresh coriander leaves
- Nigella seeds (kalonji)
- Turmeric
- Oil for frying
Preparing the filling
Boil the potatoes in a pressure cooker, peel them, and mash thoroughly. Add salt, red chilli powder, chaat masala, and garam masala to the mashed potatoes. Mix in finely chopped onion, green chillies, and fresh coriander. Combine well to form a spiced potato mixture.
Shaping the patties
Grease your hands lightly with oil or water to prevent sticking, then shape the mixture into small round patties. You may prepare all patties in advance or shape them while frying.
Making the batter
In a bowl, add wheat flour, kalonji, salt, turmeric, and chopped coriander. Gradually add water and whisk into a smooth, lump-free batter. The consistency should be medium — neither too thick nor too runny.
Frying the snack
Dip each potato patty into the batter and deep fry, similar to preparing aloo vada. Fry in small batches to prevent sticking. Cook until golden brown and crisp.
