If you want to make delicious semolina (suji) halwa perfectly on your first attempt, precise measurements are key. Cooking expert Kabita Singh recently shared her easy step-by-step recipe on YouTube, ideal for beginners looking for foolproof results.

Ingredients for Perfect Suji Halwa

  • ½ cup semolina (suji)
  • ½ cup ghee
  • ½ cup sugar
  • Your choice of dry fruits (cashews, almonds, raisins)
  • 1½ cups milk or water (three times the quantity of suji)

Step 1: Roasting the Semolina
The flavor and color of the halwa depend on how well the semolina is roasted. Heat ghee in a pan, add suji, and roast on medium flame while stirring continuously until it turns golden brown. Avoid high heat, which can burn the suji and make the halwa bitter.

Step 2: Preparing Sweet Milk or Syrup
While the suji roasts, heat milk or water in a separate pan. Once warm, add sugar and stir until fully dissolved. Milk gives the halwa a richer and softer texture, while water can be used for a lighter version.

Step 3: Adding Dry Fruits
Add dry fruits to the roasted suji so they become crispy. Gradually pour the hot milk-sugar mixture into the suji, stirring carefully to avoid splashes.

Step 4: Flavor and Finishing Touch
Mix well and add cardamom powder for aroma. For a royal touch, saffron strands can also be added. If the halwa appears dry, add a spoonful of ghee for extra shine.

Step 5: Final Cooking
Once the mixture starts leaving the pan, reduce the heat, cover, and let it steam for 2 minutes. This ensures the suji grains swell completely, resulting in soft, melt-in-the-mouth halwa that stays moist for longer.
