A Winter Delight Made Easy
During the winter season, nothing is more comforting than a warm bowl of carrot halwa. Traditionally, the most time-consuming step is grating the carrots. While many suggest using a pressure cooker to save time, Neelu offers a simpler method to prepare the halwa directly in a pan—without grating the carrots.

Healthy and Sugar-Free Option
Neelu emphasizes the use of jaggery as a healthier substitute for sugar, which is also recommended for consumption in winter. This approach not only enhances the flavor but makes the dessert more nutritious.

Ingredients for Carrot Halwa

  • 500 grams carrots
  • Ghee as needed
  • Dry fruits: cashews, almonds
  • Yellow and black raisins
  • ¼ cup milk cream

Time-Saving Tip
The most time-consuming part of making carrot halwa is grating the carrots. Neelu suggests washing and peeling the carrots, cutting off the ends, and chopping them into small pieces. Then, pulse the carrots in a mixer jar until coarsely ground—giving the texture of grated carrots.

Roast Dry Fruits
Heat a pan with a tablespoon of ghee. Roast cashews and almonds until golden and remove them. Similarly, fry the yellow and black raisins separately. Add three cardamoms and a few strands of saffron for aroma and flavor.

Cooking the Carrots
Add the ground carrots to the pan and roast in ghee for 5–7 minutes until they soften and the moisture evaporates. Then, add ¼ cup of milk cream to enhance richness.

Adding Jaggery for Sweetness
Once the mixture starts releasing ghee, add jaggery powder and the roasted dry fruits. Stir well until the halwa glistens. For an optional twist, 100 grams of paneer can also be added. Cook until the ghee separates, and your healthy carrot halwa is ready in just 10 minutes.
