Step 1: Roasting Sesame Seeds
Begin by roasting one cup of white sesame seeds in a heavy-bottomed pan over low heat. Do not add ghee or oil. Roast until the seeds slightly puff up, but avoid over-roasting as it can make the ladoos bitter. Set the roasted seeds aside to cool.
Step 2: Preparing the Ingredients
While the seeds cool, crush some cardamom pods into a fine powder for flavor. Break jaggery into small pieces for easy grinding; this prevents strain on the mixer and ensures even mixing.
Step 3: Light Grinding of Sesame Seeds
Place the cooled sesame seeds in a mixer jar. Here’s Bharat’s special trick: grind for only 5 seconds. The goal is to slightly crush the seeds so that the natural oils release, helping the ladoos bind together. Avoid grinding into a fine powder.
Step 4: Mixing Ingredients
To the lightly ground sesame seeds, add ¾ cup jaggery pieces, the cardamom powder, and ½ teaspoon desi ghee. Pulse the mixer gradually, pausing intermittently. This method allows the jaggery and sesame to blend into a smooth, cohesive mixture. The ghee adds extra softness to the ladoos.
Step 5: Shaping the Ladoos
Transfer the mixture into a large bowl. You don’t need to grease your hands, as the natural sesame oil and ghee provide enough smoothness. Shape the ladoos to uniform sizes using a small spoon or cup for guidance.
Storage and Shelf Life
These jaggery and sesame ladoos are easy to make and store well. Keep them in an airtight container, and they will remain fresh and soft for 2–3 weeks. They make a perfect energy booster during the cold winter months.
