Paneer is a staple in almost every Indian kitchen, but concerns about milk quality and rising prices often lead people to look for alternatives. This vegan version, made with the freshness of bottle gourd and protein-rich peanuts, is not only tasty but also healthier.
Preparing Bottle Gourd and Peanuts
Start with a fresh bottle gourd. Peel it and cut it into small pieces. Meanwhile, soak raw peanuts in water overnight. The next morning, peel the peanuts carefully — this step is crucial to achieve a clean, white paneer.
Grinding and Straining
Add the bottle gourd pieces and peeled, soaked peanuts in a blender. Add some water and grind into a smooth, fine paste. Using a muslin cloth or fine sieve, strain the mixture thoroughly to separate the fibrous solids from the liquid, creating a milk-like consistency.
Achieving the Right Consistency
The liquid obtained may be quite thick. Add a little water if necessary until it resembles cow’s or buffalo’s milk. Pour this mixture into a heavy-bottomed pan, which prevents sticking and ensures even cooking.
Boiling and Curdling
Heat the mixture until it starts to boil, then reduce the flame. Gradually add a tablespoon of vinegar while stirring. Just like milk curdles to form paneer, the solids from the bottle gourd and peanuts will separate from the liquid.
Setting the Paneer
Transfer the curdled mixture onto a muslin cloth and let the excess water drain. Wrap the cloth and place a heavy weight on top for about 30 minutes. This helps the paneer firm up into a solid block.
A Market-Quality Texture
After 30 minutes, unwrap the cloth to reveal soft, white paneer that looks and feels just like store-bought paneer. Cut it into desired shapes. This paneer is not only visually appealing and soft, but it is also packed with protein from peanuts and light and healthy due to the bottle gourd.
This innovative recipe proves that you don’t need milk to enjoy the classic taste of paneer — just some creativity, patience, and wholesome ingredients.
