Ingredients for Poha Vada
- 1 cup thick poha
- 2 tsp oil
- 1 tsp chana dal
- 1 tsp mustard seeds
- ½ tsp fennel seeds
- 1 tsp urad dal
- 1 onion, 1–2 green chilies, and ginger
- 1 tsp yogurt
- Salt, sugar, and crushed black pepper to taste
Preparation Method
- Prepare the Poha: Wash the poha 2–3 times under running water. Do not soak it, as it may become too soft. Drain and gently mash the poha so that it sticks together, but do not knead it like dough.
- South Indian Tempering: Heat 2 tsp oil in a small pan. Add chana dal, mustard seeds, fennel seeds, and urad dal. Finally, toss in fresh curry leaves until they sizzle. Pour this hot tempering over the poha mixture to add a fragrant crunch.
- Add Vegetables and Spices: Mix in finely chopped onions, ginger, and green chilies. These not only enhance flavor but also keep the vada soft inside. Add a pinch of salt, sugar, crushed black pepper, and a spoonful of yogurt for tanginess and binding.
- Shape the Vadas: Combine the poha, tempering, and vegetables into a dough-like mixture. Lightly oil your hands and shape small vadas. You can create a traditional medu vada shape with a hole in the center or leave them round.
- Cooking Options: The vadas can be deep-fried in medium-hot oil for the classic taste or air-fried with minimal oil for a healthier alternative. Serve hot with mint chutney or tomato ketchup for a delicious snack.
