Jaggery is a staple in Indian kitchens, enhancing the flavor of everything from winter millet rotis to tea and traditional sweets. However, one common problem persists: jaggery often becomes sticky, melts, or develops mold within days of purchase. YouTuber Veena Gupta recently shared a simple method to store jaggery so that it remains fresh, flavorful, and usable for an entire year.

Choose the Right Container
One of the biggest mistakes is storing jaggery in plastic containers, which easily absorb moisture and cause spoilage. Gupta recommends using steel containers instead. Not only do they protect the jaggery, but they also maintain its taste and purity.

Cut into Small Pieces
Jaggery typically comes in large blocks. Cutting it into smaller pieces before storage has two advantages: it saves space in the container and makes it easier to use without handling a whole large block. You can simply take out the portion you need, leaving the rest undisturbed.

Protect from Moisture with Airtight Packing
Moisture is jaggery’s worst enemy. Exposure to air can make it melt. To prevent this, fill a clean, dry steel container with the jaggery pieces and seal it tightly. If the lid isn’t airtight, cover it with a clean cotton cloth before closing to ensure no air seeps in.

Store in the Freezer, Not the Fridge
Gupta emphasizes that while many people store jaggery in the fridge, the freezer is far more effective. The cold, stable temperature prevents melting or stickiness. Even after a year, the jaggery will remain firm yet manageable and retain its original flavor and color.

Maintain Freshness and Usability
With this method, the jaggery stays fresh, does not harden into an unusable block, and retains its natural taste. Whenever needed, simply take out a piece, use it, and return the container to the freezer. This is especially useful for those who purchase jaggery in bulk and want it to last year-round.
