How Delhi’s Famous Ram Laddoo Are Made: Chef Ranveer Brar Shares the Recipe

For those outside Delhi who wish to try these iconic snacks, Chef Ranveer Brar has shared an easy recipe to make them at home. Contrary to what the name suggests, these laddoos are not sweet—they are spicy and tangy, offering a truly flavorful experience.

A Clarification on the Name
Despite their name, Ram Laddoo have no connection to Lord Ram. Chef Brar emphasizes that the name can be misleading for those unfamiliar with Delhi street food. The laddoos are a savory delight, perfect for anyone craving something spicy, tangy, and crispy.

Ingredients for Ram Laddoo

  • 2 cups moong dal
  • 1 cup urad dal
  • ½ cup chana dal
  • 1-inch ginger
  • 2 green chilies
  • Salt, to taste
  • Oil for frying

For the Chutney

  • Radish leaves
  • 1-inch ginger
  • 2 green chilies
  • Coriander leaves
  • 1 spicy radish

Step 1: Prepare the Dal Mixture
Chef Brar advises adjusting the quantity of moong, urad, and chana dal as per your preference. Soak all three dals to make grinding easier. Chop ginger and green chilies and add them to the soaked dal. Mix everything together thoroughly.

Step 2: Grinding the Dals
Grind the dal mixture along with ginger and green chilies, adding a little water gradually. Mix slowly to avoid overheating the blender. Transfer the mixture to a bowl, add salt, and whisk well until the mixture becomes airy.

Step 3: Add Radish Leaf Paste
To give Ram Laddoo their signature taste, add radish leaf paste to the mixture. This step is crucial—without it, the laddoos would taste like plain moong dal fritters. Mix thoroughly.

Step 4: Frying the Laddoos
Heat oil to medium temperature. Frying at medium heat ensures the laddoos puff up properly and achieve a golden color. Cold oil may cause the fritters to split, while hot oil prevents them from rising.

Step 5: Prepare the Chutney
For the green chutney, grind radish leaves, ginger, green chilies, coriander, and salt. Peel and grate one radish, add coriander and green chilies, and squeeze in some lemon juice. Serve Ram Laddoo hot with this chutney and a side of yogurt for the perfect snack experience.
