Nupur’s Kitchen recently shared a simple and flavorful recipe for a healthy chutney made from moringa, commonly known as drumstick leaves. This chutney is not only tasty but also packed with nutrients and easy to prepare at home.
Why Moringa is a Superfood
Moringa leaves are rich in vitamins, iron, and calcium, making them highly beneficial for health. Traditionally, they are used in curries or parathas. However, this recipe transforms the leaves into a vibrant and nutritious chutney that can boost immunity while enhancing the flavor of any meal.
Ingredients and Preparation
1. Tempering Lentils and Cumin:
To make the chutney, heat 2 tablespoons of oil in a pan. Add 1 teaspoon of cumin seeds, followed by 2 tablespoons each of chana dal and urad dal. Roast the lentils until they turn lightly golden. This gives the chutney a delightful crunch and aromatic flavor.
2. Peanuts and Spices:
Next, add 1/4 cup of peanuts, which provide thickness and protein to the chutney. Include 6–7 peeled garlic cloves, 3 Kashmiri red chilies, and 1 green chili. Roast over medium heat until lightly browned, balancing the chutney’s spice and taste.
3. Tamarind and Salt:
Once the leaves and spices are well-roasted, add tamarind pulp (about half a lemon-sized portion). The tanginess of tamarind neutralizes the slight bitterness of moringa leaves. Finish by adding salt to taste. The combination of tamarind and salt intensifies the overall flavor. Turn off the heat.
Grinding the Chutney
Allow the mixture to cool completely before grinding, as blending hot ingredients can alter the color and flavor. Once cooled, transfer the mixture to a blender and grind to a smooth or slightly coarse consistency using a little water. Your fresh, nutrient-rich moringa chutney is ready to serve.
