Ingredients
For the spice mix:
- 1 tsp whole coriander seeds
- 2 dried red chilies
- ½ tsp cumin seeds
For the stuffing:
- 1 bowl green peas
- 4 boiled potatoes
- Red chili powder
- Coriander powder
- ½ tsp chaat masala or dry mango powder
- Fresh chopped coriander leaves
- Salt to taste
For the dough:
- 1 cup refined flour
- 1 tsp carom seeds
- 4 tsp oil
- Salt to taste
- Oil for frying
Method
Prepare the spice mix:
Dry roast coriander seeds, red chilies, and cumin on low heat until aromatic. Let them cool and grind into a coarse powder. This fresh masala adds a rich depth of flavor to the filling.
Make the stuffing:
Heat oil in a pan, add cumin, asafoetida, and turmeric. Add peas and salt, cover, and cook for 1–2 minutes. Mash the boiled potatoes and mix them in. Add red chili powder, coriander powder, chaat masala, and a spoonful of the prepared spice mix. Cook briefly and finish with chopped coriander leaves.
Knead the dough:
Mix flour, oil, carom seeds, and salt. Rub well to incorporate the oil, then add water gradually to knead a firm dough. Cover and let it rest.
Shape the snack:
Roll out small portions of dough and cut into squares. Fold the corners to form a flower shape, place stuffing in the center, and seal carefully.
Frying:
Deep fry in medium-hot oil until golden brown and crisp. Serve hot with green chutney or tomato sauce.
